(Fiori con Ripieno)
Ingredients:
- 16 - 18 zucchini flowers
- 6 oz. grated parmesan cheese
- small pieces of mozzarella cheese (1/2" square is good)
- 1 clove garlic, chopped
- 3 T. parsley, finely chopped
- 1 beaten egg + 2 T. milk
- flour and fine breadcrumbs mixed together with salt and pepper
Mix cheese - parsley together, spoon mix carefully into the flowers, tucking over the petal tops to close. Dredge in egg mix, then in flour/breadcrumb mix, and saute in oil until browned on both sides and cheese is melted.
You can also stuff with some finely chopped ham.
You can also stuff with sauteed onion, and some diced sauteed zucchini bits.
You can also stuff with goat cheese and small pieces of anchovy.
You can also place stuffed flowers in a single layer in an oiled pan, add a touch of white wine, top with bread crumbs and bake at 400 for about 20 minutes.
