Green Beans Nahal

A special recipe from a fellow Italian student, Ralph made this recipe many, many times. You must use very fresh, young crisp green beans, or you won't be happy with the result.

Ingredients:

Rinse the beans and cut off the vine ends. Bring water to boil in a pan, add the beans, and steam uncovered for about 5 mins. The beans should remain crunchy. If you need to add a little more water to reach this point, go ahead.

When all the water has evaporated and the beans are crunchy, add the olive oil, chopped garlic, salt and pepper, and Italian seasoning. Stir over high heat for several minutes. Remove from heat, you can add a little good balsamic vinegar or lemon juice if you wish.

This is good served at room temperature.

This is also good served with shavings of good parmesan cheese, and/or some lemon zest.
