Ralph loved to eat salad: Caesar salad, Waldorf salad and many other salads, but he didn't really like to spend time preparing them. Not like the amount of time he would spend on other edibles (especially meat!). This recipe is the only salad recipe Ralph wrote down by hand in our recipe collection, and it is very good.
Ingredients (serves 4 - 6):
- 1 large bunch of watercress, washed and dried carefully
- 3 large handfuls of cleaned red-leaf lettuce, washed and dried
- 3-4 navel oranges - cut in half lengthwise and sliced in thin sections
- 1/2 bulb fennel, cored, and shaved thinly going with the grain, not across it
- 1/2 sweet red onion, sliced thinly
- 1/2 cup nicoise olives
Vinaigrette: whisk these ingredients together:
- 6 T. fruity olive oil
- 4 tsp balsamic vinegar
- 4 tsp red wine vinegar
- 1/2 tsp salt
- pepper to taste
Place the oranges, onion, olives, fennel on a platter and cover with 1/2 of the vinaigrette, toss greens with the remaining vinaigrette and place on top of the orange/onion mix.
