Salad Dressing

Combine 1 teaspoon of vinegar (organic cider vinegar is good), with 1/2 teaspoon of good mustard, mix, add about 1/3 cup of very good olive oil. It is best to beat this mixture with a small whisk.

Finely chop a handful of parsley leaves, a few chives or a green onion, and 1 clove of garlic. Add to the olive oil mixture. Season with salt and freshly ground pepper. Toss with salad greens and serve.

This mixture, with an ample amount of parsley, chives and garlic, also makes a wonderful sauce with chicken, pork or steaks. You can also alter the flavor using lemon juice instead of vinegar, adding anchovy, macerated capers, etc.
