(makes 2 loaves using 8-1/2" x 5" loaf pans)
Preheat oven to 350 degrees F.
Ingredients:
- 3 eggs
- 2 c. brown sugar (packed)
- 1 c. oil
- (Beat the above 3 ingredients together for 2 mins).
- 2 c. flour
- 1/2 tsp. baking powder
- 2 tsp. baking soda
- 1/2 tsp. salt
- 3 tsp. cinnamon
Sift these ingredients together:
- 2 c. grated zucchini (squeeze out excess water) You can remove moisture by pressing the grated zucchini while it is in the measuring cup and pouring out excess water. If there is none, then don't worry about it.
- 3 tsp. vanilla
- 1 c. chopped nuts
Add the dry ingredients to the egg/oil/sugar mixture and mix thoroughly.
Then, stir in the zucchini, add the vanilla and nuts until well mixed.
Grease the loaf pans and divide mixture into the two pans.
Bake for 45 - 50 minutes. Test with toothpick, it should come out clean. if not, bake a few minutes more.
Cool a few minutes, then remove from pan to a cake rack and cool completely.
