Serves 8
You will need between 1-1/2 lbs and 2 lbs. of pasta for this dish. That will be 3 - 4 oz of pasta per plate. You will also need about 12 oz. of smoked salmon.
This is a rich dish, and should be either the main course served with a light salad, or a small first course.
Ingredients for the Sauce:
- 2 c. half and half
- 4 T. Brandy
- 1/2 tsp cayenne pepper
- 2 pieces of lemon rind (not grated, just a couple of slices of the peel only, no pith)
- 1/4 tsp nutmeg
Heat the above sauce ingredients in a double boiler until the cream mix becomes hot and the flavors are allowed to melt together and the brandy to cook off.
Cook the pasta to al dente. Drain and return to the pasta pan. Add 2 T. butter to the pasta.
Remove the lemon rind from the sauce and pour sauce over pasta. Mix and serve in warm pasta dishes.
