Serves 3 - 5, depending on whether this is a first course or a main course
Ingredients:
- 12 oz. penne pasta
- 3/4 cup to 1 cup of your favorite store bought pasta sauce (Ralph liked Prego Plus with sausage and green pepper for this pasta but try whatever you prefer)
- 1/4 tsp cayenne pepper
- 1/2 tsp dried marjoram or oregano
- 1 tsp or more of chopped parsley
- 4 plum tomatoes, skinned, peeled and diced
- 1/2 cup half and half
Add all ingredients to sauce and simmer for about 15 minutes. At end, add 1/2 cup half & half (you can substitute a good fat-free creamer light Land O Lakes, but it is not nearly as good), Turn off heat.
Cook penne pasta al dente. Drain and return to pan, adding a little of the sauce. Place servings in warm pasta plates and top with some more sauce but not too much. Sprinkle with grated romano cheese and some freshly grated parsley.
You may wish to offer crush dried red pepper as a side, in case someone really likes more heat.
