This is a simple dish, but Ralph did not write down proportions, therefore you can tailor the amount of the marinade to the amount of scallops you have to cook.
Marinade Ingredients:
- Equal parts of rice vinegar and soy sauce
- Some minced ginger
- A little seasoned sesame oil
Mix enough of these ingredients to marinate the amount of scallops you have. Marinate for about 1/2 hour or 1 hour.
Skewer the scallops with good size pieces of red and yellow peppers, and/or zucchini, onion or other vegetable you have on hand.
Baste the scallops and grill or BBQ until the vegetables and scallops are done.
Remove from skewers and serve with rice.
The scallops should be served with a nice vinaigrette made of parsley,cilantro, chives, garlic, vinegar and oil, and salt and pepper to taste
