Salmon, Tuna, Swordfish, Halibut

Any of the listed fish are good with this recipe. You can use fillets or steaks.

Ingredients: Pesto

Chopped Mint, parsley, capers marjoram or Italian seasoning,

a few cloves chopped garlic

lemon zest

pine nuts and almonds, chopped fine

Olive Oil

Directions:

  1. Combine all ingredients and make into a pesto, with mortar/pestle, or, chop very fine
  2. Lightly salt fish, add pesto mixture on fish, then cover fish with homemade breadcrumbs that are not too dry (just take some old dry bread, put in a food processor and give it a whirl, salt and pepper).
  3. Place in pre-heated 400 degree oven and bake for approx 10 mins. How long will depend on thickness of the fish fillets or steaks.
  4. Serve with lemon wedges.
