Ralph liked this simple dish that I made using just what was on hand. I only made it once, but he made me write it up and he prepared it often.
Ingredients:
- 2 Chicken breasts, boned and skinned
- 1/2 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, most of skin removed, and julienned
- 1/4 cup dry sherry
- salt and pepper
- flour for prep
Directions:
- Mix the flour with some salt and pepper and dredge the chicken breasts.

Saute onions and bell pepper in some oil with a little butter,
over medium heat. When the pepper is soft, add garlic for 1 minute.
(Note:peppers and onion take a long time to get soft, so don't hurry this -especially if you like the nutty sweetness of really cooked peppers and onions) - Remove and set aside. Add a little more olive oil.
- Place breasts in pan on medium heat for 3 -4 minus, turn over, grind freshpepper and add back the onion/bell pepper mix.
- Cook for 2 or 3 minutes, depending on the depth of the breasts.
- Add the sherry and cook 1 minute more. Serve.
Great with french bread and a good salad and a good white wine.
