Ralph prepared this so many times. Keiko cooked at the Marin County Honor Farm and gave Ralph the recipe. He also used this marinade for pork.
Ingredients:
- 1/4 cup white wine vinegar
- Juice of one lemon
- 1 cup soy sauce
- 3 T. brown sugar
- 1/4 cup oil
- 2 tsp fresh ginger, chopped fine
- 3 cloves of garlic
- Juice of one orange, plus cut up the orange and add to the marinade
- parsley, chopped
- 1/3 yellow onion, chopped
- 2 T. seasoned salt
- Honey
Mix ingredients (except for the honey) in a bowl. Put chicken in a plastic bag in a bowl, pour marinade into bag, tie off, and put the bag, in the bowl, in the refrigerator. Marinate overnight or for at least several hours.
BBQ chicken or bake chicken 40 minutes at 325. 5 - 10 minutes before done, brush the chicken with some honey (which you can thin a little with lemon or water).
