Ralph culled this recipe from a magazine (I just don't know which one, sorry) and it is heavenly. I hope you enjoy it.
Serves 4
Ingredients (serves 4):
1/4 c. fresh orange juice
1/4 c. low sodium soy sauce
1/4 c. packed brown sugar
1/4 c. chopped green onions
3 T. chopped fresh chives
2 T. fresh lemon juice
2 garlic cloves, chopped
4 6-oz. salmon fillets (about 1 inch thick)
Directions:
- Combine the first 8 ingredients (everything but the salmon) in a large zip-top plastic bag. Add salmon, seal and marinate in refrigerator about 2 hours, turning the bag occasionally.
- Prepare grill or broiler.
- Remove salmon from bag, reserving marinade. Place salmon on grill rack or broiler pan coated with cooking spray. Cook 6 minutes on each side or until fish flakes easily when tested with a fork, basting at least a couple of times with reserved marinade.
