Grape Cake, from Wendy Walsh
This is very good - no matter what fruit you use in it.
Ingredients:
- 1/2 cup (1 cube) softened butter
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla
- 1 cup flour
- 1 tsp baking powder
- 1-2 cups red grapes
- sugar for sprinkling
Directions:
- Butter a large 10-12 inch springform tart or cake pan.
- Sprinkle with bread crumbs or flour.
- Beat butter with sugar until fluffy. Add eggs and continue beating.
- Stir in vanilla and gently add flour and baking powder.
- Spread in prepared pan. Cover top with grapes and sprinkle with sugar.
- Bake for 30-40 minutes in 350 F oven.

Wonderful warm, wonderful cold or wonderful served with vin santo.
You can also use peaches, any kind of fruit. Add a little rum, or add a few walnuts, or..... be creative.
