Grape Cake, from Wendy Walsh

This is very good - no matter what fruit you use in it.

Ingredients:

Directions:

  1. Butter a large 10-12 inch springform tart or cake pan.
  2. Sprinkle with bread crumbs or flour.
  3. Beat butter with sugar until fluffy. Add eggs and continue beating.
  4. Stir in vanilla and gently add flour and baking powder.
  5. Spread in prepared pan. Cover top with grapes and sprinkle with sugar.
  6. Bake for 30-40 minutes in 350 F oven.

Wonderful warm, wonderful cold or wonderful served with vin santo.

You can also use peaches, any kind of fruit. Add a little rum, or add a few walnuts, or..... be creative.
