(Almond Torte)
Ingredients (8-10 servings):
- 10 oz. almonds
- 1-1/3 cups sugar
- 8 eggs whites
- 1/2 tsp salt
- 6 T. Flour
- 1/4 tsp lemon extract
- 1 tsp vanilla
Directions:
- Butter and flour an 8 " - 10" inch springform pan.
- Preheat oven to 350 F.
- Grind almonds very fine. Add sugar to almonds and mix well.
- Beat eggs whites with the salt until they form stiff peaks.
- Gently fold in sugar, almond mix, lemon and vanilla extracts.
- Sift or sprinkle the flour over the mix and fold in.
- Pour into prepared pan and place in the middle of oven. Bake for one hour and let cool before serving. Loosen with knife around edges.
