Torta di Mandorla

(Almond Torte)

Ingredients (8-10 servings):

Directions:

  1. Butter and flour an 8 " - 10" inch springform pan.
  2. Preheat oven to 350 F.
  3. Grind almonds very fine. Add sugar to almonds and mix well.
  4. Beat eggs whites with the salt until they form stiff peaks.
  5. Gently fold in sugar, almond mix, lemon and vanilla extracts.
  6. Sift or sprinkle the flour over the mix and fold in.
  7. Pour into prepared pan and place in the middle of oven. Bake for one hour and let cool before serving. Loosen with knife around edges.
