Pitte dolci di Pasqua: "Easter sweets"
Ingredients Dough:
- 2 cups (8 oz) flour
- 1 T. sugar
- 1/2 cup olive oil
- 1/2 cup + moscato wine (you can also use sweet marsala)
- 1. T. grated orange rind
- 1/4 tsp. ground cinnamon
Ingredients Filling:
- 3/4 cup dark raisins
- 2 T. moscato wine (sweet marsala okay)
- Mix these two and marinate for 3 hours
- 1/2 cup chopped walnuts
- 1 oz. semisweet chocolate, chopped fine
- 1/2 tsp. grated lemon rind
- 2 T. honey
- Powdered sugar for dusting
Pastry dough: Mix flour and sugar, then mix with the oil. Heat the moscato wine to just under boiling, add it to the flour/oil mixture. Add the orange rind and cinnamon and knead for a few minutes. Add as needed, up to 2 T. of additional wine to obtain a smooth, elastic dough. Set aside, covered.
Filling: Toss the raisins with the wine and marinate for 3 hours. Drain the excess moisture, if any, and mix with all the other filling ingredients.
Roll dough about 1/8" thick on a floured surface. Cut into 4" rounds. Divide the filling among the rounds. Moisten the edges with water, fold in half and press together to seal, like little half moons. Pierce the surface with a fork.
Place on a lightly oiled cookie sheet and bake at 375 for 8 minutes, then 350 for an additional 15 minutes (approx.)
Dust with powdered sugar and cool.
