Ralph made these mushrooms many times as appetizers for parties, and they were always quickly eaten and much enjoyed.
Serves 4.12 large brown mushrooms, with stems removed. Chop the stems and set aside.
Brown the whole mushrooms in oil and a little butter. Remove and place on a baking sheet or broiler pan, bottoms up.
Cook together the chopped mushroom stems and some fresh garlic (1 large or 3 small cloves, chopped).
Mix the stems with:
- 2 green onions, chopped (you can also use chives)
- 2-3 T. bread crumbs
- 1 tsp. oregano
- 1-1/2 cups mashed potatoes
- 1/2 cup or less of grated Italian fontina cheese
- 1/4 cup parmesan cheese
- salt and pepper
Broil in oven about 6- 7 minutes until golden brown on tops.
Serve
